It depends what you would really like to know.
Are you looking for information about the edges
of the sheets?
If you are interested in the way foldouts have
been folded, this is known in detail, from a
personal visit to the Beinecke by Jim Reeds
(later also confirmed by others). 
These foldouts have not received any attention in
the recent discussions about page ordering, and
IMHO they are very important. My guess is that
they are written on 'leftover' pieces of vellum
that could not be made into a standard quire.
Only the 9-ring rosettes page and some of 
the pharma pages actually require a foldout.
