Romance languages all derive from Vulgate Latin,
if I remember correctly, and even the modern 
versions are sufficiently similar to allow one to
recognise them for what they are. I learned Latin
at school and know French and quite a bit of Italian.
With that, I can largely understand written
Portuguese, Catalan, Occitan. This is especially
true if one knows a few basic 'rules and tricks'.

I suspect that this will be even more the case
for the medieval
varieties, so if one were to analyse the VMs 
assuming that it is in Vulgate or Italian, then
one should not have a problem finding the solution
even if it is in another dialect.
Also, if someone were to produce a translation
of the Voynich MS in some Romance-like dialect,
which is used consistently throughout the 
MS, then I would not be concerned if it had an
odd or inconsistent orthography. Note that 
Levitov's "translation" does not qualify as any
dialect of anything.
