Might an experienced person be able to tell (say, from touch?) which side is which? Or, broadly at what order of magnification should the difference between the two be clearly visible?

According to my experience, this is usually visible simply by looking at the recto and at the verso (of course, looking at the *real* sheet, not at a JPG!). There are more visible and less visible cases, but you quickly get the 'feeling' of it.

While we've often talked about how the bifolios are in the wrong order, hair-to-hair / flesh-to-flesh might prove an interesting test of different reorderings (such as for the balneological quire).

Hair-to-hair and flesh-to-flesh is usually the 'right' order; i.e. if, say, 1v is hair, 2r (which is visible at the same time of 1v) should be hair too and so on. However, it may happen (albeit less frequently) that a codex was originally assembled with the sheets in the 'wrong' order.
