I think that is correct. Beyond the nth order there is no structure.
This is also described nicely in Bennett's book and also in an old Scientific 
American (perhap Computer Recreations column, can't find it now).
For example, the "word monkeys" (rather than the character monkeys) of order 3 
produce an almost readable (and funny) nonsense if given different subject 
texts to gather the transition probabilities.
