Yes, I did something very close to what you describe (published in my 
Cryptologia article). You can find a pdf preprint at my site.
In that paper you can see what the spectral power looks like and what are the 
differences between original texts, word-scrambled and character scrambled.
(thus breaking only grammar or grammar and word structure, respectively).

I finally chose to look into space-less texts because I cannot be sure that 
the spaces code for anything or not. In the analysis of space-less text not 
only you can guess the modal token length, but you can also see the verse 
length (if in verse!) and also harmonics of the verse length.

Excel can do FFT, but there are much better packages. For that stuff I used 
the Tisean package which you can download for free. (the executable 
you need is called spectrum.exe).
